The Blind Donkey, which has relocated to Kiyosumi Shirakawa, will reopen for business today.
We are deeply grateful to @nknta, President of Nihon Shigoto Hyakka for the wonderful opportunity to be in Kiyosumi, and look forward to working with him in many ways to diversify working styles in the restaurant industry.
We are conscious of restaurants as places where people can grow and develop.
At this Kiyosumi restaurant, Executive Chef Jerome will be supporting the team by mentoring the new Head Chef, Sone. Chef Yamamoto, who plans to go independent next year, is also a new addition to the team. Aoba, who supports the floor, is the former manager of Kamiyama’s restaurant, and from here will further develop activities to strengthen the connection with farmers and producers in Kiyosumi Shirakawa.
Our goal is “100% Organic Japan”.
This is a goal that cannot be achieved by our generation alone. It is an activity where the next generation of chefs and farmers can meet. We will not let our vision end up as a mere figment of the imagination, but will insist on implementing it into our society.
The space will be designed by @studio_doughnuts
The design of the space was done by @studio_doughnuts, and the counter and tables were retained, and combined with the large, bright windows, the space has a more “intimate” atmosphere, according to Jerome, while retaining the traditional image.
As a restaurant, we will continue to have a strong passion for food, but will also continue to serve seasonal vegetables in a simple and delicious way… We will add the joy of music and art to that, and will nurture a place where people can enjoy eating as a part of their culture.
